Prof. Luciana de Siqueira Oliveira
She holds a B.Sc. in Food Engineering from the Federal University of Ceará (2005), a Master’s degree in Biochemistry (sub-area Post-harvest Physiology) from the Federal University of Ceará (2008), and a PhD in Biochemistry (sub-area Post-harvest Physiology) from the Federal University of Ceará (2012). Currently, she is an Adjunct Professor in the Department of Food Engineering at the Federal University of Ceará and a permanent professor in the Graduate Program in Food Science and Technology (PPGCTA/UFC). She conducts research in the area of Food Science and Technology, with experience in the following topics: development of plant-based products with functional properties (probiotic, prebiotic, and symbiotic; antioxidants), study of the potential of agro-industrial co-products as sources of active compounds (antioxidant, antimicrobial, and anti-inflammatory compounds), effect of processing on the bioaccessibility of nutrients and bioactive compounds, and active biodegradable packaging. She participated as an inventor-researcher on the patent titled “Development of sauce based on acerola, pumpkin, and beet”, which is currently licensed to the company Frutã under the trade name Natchup.
