Prof. Larissa Morais Ribeiro da Silva

Currently, she is an Adjunct Professor and Researcher in the Department of Food Engineering at the Federal University of Ceará, working in the undergraduate Food Engineering course, the Graduate Program in Food Science and Technology (UFC), and the Graduate Program in Gastronomy (UFC), where she supervises undergraduate research, Master’s, and/or PhD students. She is the Coordinator of the Food Microbiology Laboratory (DEAL/CCA/UFC). She holds a B.Sc. in Food Engineering from the Federal University of Ceará (2008) and a Master’s degree in Food Science and Technology from the Federal University of Ceará (2010), having conducted part of her scientific activities at the Federal University of Viçosa (UFV, Viçosa/Minas Gerais). She holds a PhD in Food Science and Technology from the Federal University of Ceará (2014/CNPq) with a sandwich period at Texas A&M University, Biological and Agricultural Engineering Department, Texas/USA (CAPES). Her research relates to food microbiology, the development of new plant-based products, the utilization of agro-industrial by-products, and the toxicology of natural products.
