Prof. Paulo Henrique Machado de Sousa
Paulo Henrique Machado de Sousa is a professor in the Gastronomy Course at the Federal University of Ceará, coordinator, professor, and supervisor in the Master’s Program in Gastronomy at the Federal University of Ceará, professor and supervisor in the Graduate Program in Food Science and Technology at the Federal University of Ceará, and supervisor in the Master’s Program in Gastronomic Sciences at Universidade Nova de Lisboa (Portugal). He completed his PhD in Food Science and Technology at the Federal University of Viçosa and in Chemistry at the Federal University of Ceará. He works in the areas of Gastronomy and Molecular Gastronomy, with an emphasis on Sensory Analysis as a tool for product development and monitoring. (Text provided by the author)
