Prof. Nédio Jair Wurlitzer
He holds a PhD in Food Science and Technology (UFV – 2007), a Master’s degree in Food Science and Technology (UFRRJ – 1996), and a degree in Food Engineering (UFSC – 1986). Since 2008, he has worked as a researcher at Embrapa Tropical Agroindustry (in Fortaleza – CE), on research projects related to functional foods, conservation processes, unit operations, and fruit processing, among others. Since 2018, he has also served as a professor in the Graduate Program in Food Science and Technology at the Federal University of Ceará. Previously, he was at SENAI/RJ – Food and Beverage Technology Center (1988 to 2008), as Coordinator of Technological Services, with experience in product development, consulting, and training in Food Technology, with emphasis on Meat Product Manufacturing Technology, working mainly on topics such as HACCP, food technology, meat technology, food safety, thermal treatment, and sterilization. He also served as a Full Professor in the Industrial Chemistry course at Universidade Severino Sombra from 1998 to 2008.
