Prof. Maria do Carmo Passos Rodrigues

She graduated as a Pharmacist-Biochemist from the Federal University of Ceará – UFC (1974), with Specialization and Advanced Training in Chemical Pharmacy and Quality Control I and II at the Federal University of Rio de Janeiro – UFRJ (1975). She holds a Master’s degree in Food Technology from the Federal University of Ceará (1982) and a PhD in Food Technology from the State University of Campinas – UNICAMP (2001). Currently, she is a Full Professor at the Federal University of Ceará and Coordinator of the Sensory Analysis Laboratory / DEAL/UFC.  She has experience in the area of Food Science and Technology, with emphasis on Sensory Analysis; Quality Evaluation, Control, and Management; Product Development and Sensory Marketing, working mainly on the following topics: sensory analysis, sensory profiles, sensory optimization, consumer science, product development processes and innovation, study of raw materials with functional properties, product quality evaluation, and sensory marketing strategies.
