Prof. Fabiano André Narciso Fernandes
He holds a B.Sc. in Chemical Engineering from the Federal University of São Carlos (1997), and Master’s and PhD degrees in Chemical Engineering from the State University of Campinas (2002). Currently, he is a professor in the Department of Chemical Engineering at the Federal University of Ceará. He conducts research at the interface between Food Engineering and Chemical Engineering, covering the following topics: food drying; development of non-thermal technologies (cold plasma, ultrasound, ultraviolet light) applied to the sensory and nutritional improvement of foods; extraction of bioactive compounds; and utilization of food industry waste. His research generally involves the development of technologies and the evaluation of these technologies on product quality.
