Prof. Ana Paula Dionísio
Researcher in agro-industrial processes at the Brazilian Agricultural Research Corporation, Tropical Agroindustry Unit – CNPAT – EMBRAPA (Fortaleza – CE). She holds a B.Sc. in Food Science (USP, 2006) and a PhD in Food Science from the School of Food Engineering (UNICAMP, 2010), with a research stay at the Laboratory of Industrial Biotransformations (Madrid – Spain). Currently, she works on the following research lines: agro-industrial processes, functional foods, prebiotics, antioxidants, experimental design, and process optimization.
